
We normally make this with a combination of strawberries and blueberries, but using fresh peaches would also be delicious! Man, what I wouldn't give for a roadside stand with South Carolina or Georgia peaches right now...

Julane's Delight
3 cups vanilla wafer crumbs (1 box)
1/2 cup melted margarine or butter
8 oz cream cheese (I use low-fat)
2 cups milk (I use skim)
1 small box instant vanilla pudding
1 quart fresh sliced strawberries (or peaches, blueberries, raspberries or a combo!)
9 oz. Cool Whip (I use fat free)
Mix wafer crumbs with melted margarine and spread 2 cups in the bottom of a 9x13 pan. Reserve remaining cup of crumbs for later.
Mix 1/2 cup milk with softened cream cheese and blend until smooth. Add instant pudding and the remainder of milk and beat for one minute. Pour mixture over wafer crumbs then spread on strawberries or other fruit. Spread Cool Whip on top and finish by sprinkling on remaining wafer crumbs. Refigerate for an hour before eating. The dessert is best while the wafer crumbs are crunchy and the fruit is fresh! Serve within a day or two for best results.
This would be perfect for that 4th of July BBQ you are headed to tomorrow!





Yum yum!! Maryland peaches are nothing to turn your nose up at either! Got a few at the farmers' market in our new town last weekend. They were so delicious, but best eaten in a bath! :)
